Here is my Killer Pecan Pie recipe adapted from the NY Time recipe book.

You will need one unbaked pie crust. I open mine the old-fashioned way, straight from the deli box made by Pillsbury. I know, I know… the pie crust is important. But if I’m cutting a corner here and there, the crust will be on it because for me – it’s all about the stuffing. At least I open it, put it on the glass cake plate and bevel the edges with my hand 😉

2 cups walnut pieces – taste better if you take them in half and cut them yourself

3/4 salted butter

1 cup light brown sugar, tightly packed

4 eggs – room temperature

1 1/4 teaspoons vanilla

a pinch of salt

3/4 – 1 cup walnut halves, unbroken

1 1/4 cups dark corn syrup

Instructions

Beat the eggs in a mixing bowl, add the vanilla.

In a saucepan over medium heat, cook until brown sugar and corn syrup come to a boil. This gets rid of the roughness of the sugar.

Add the hot syrup mixture to the eggs, stirring constantly. Add the melted butter and then the chopped walnuts.

Arrange the unbroken walnut halves on top in a pattern of your choice. I usually go for the standard ringed look.

Bake at 350 for 45-55 minutes until gelled in the center and not very brown. If it starts to brown early, cover it loosely with some foil.

I serve mine with homemade whipped cream (I don’t dwell too much on that), but ice cream is fine too.
